Golden Orange

First
COD AND ORANGE SALAD
ingredients:
250 g of desalted cod
3 oranges
4 young garlic
paprika
80 g black olives
virgin olive oil
parsley

Preparation:
First, peel the oranges and cut them into slices. Then, leave the cod confit in olive oil without allowing it to boil for about 5 minutes with the garlic. In a bowl place orange slices with flaked cod, the garlic and sliced black olives on top. We water with olive oil and let marinate in the refrigerator for 3 hours. We serve and finished with a dash of paprika and some parsley.

Second
CHICKEN MEATBALLS WITH CUTTLEFISH, ORANGE AND ALMOND SAUCE
ingredients:
½ kg minced chicken
1 sepia
200 g monkfish bones
1 onion
1 clove of garlic
zest of 1 orange
100 g of almond
1 egg
bread
1 dl milk
flour for coating
oil

Preparation:
Make a broth with the bones of rape. Mix the minced meat with eggs, bread and milk. Form the meatballs in flour and fry spend. Fry onion in brunoise with garlic. Add the cuttlefish with garlic and onion with crushed almonds and saute over high heat. Add the monkfish soup dumplings and orange zest. Bring to the boil 5 minutes. Serve.

Dessert
TANGERINE CREME WITH GREEN TEA
ingredients:
green tea
sugar
4 tangerines
2 egg yolks
Gelatine leaves
milk
cornstarch

Preparation:
Make a strong tea with sugar
Hydrate the gelatin in cold water and add tea. Make cool. Grate the peel of tangerines and squeeze the juice. In a saucepan add the two eggs, yolks, sugar, butter and grated tangerine. Cook over low heat, stirring rod until the mixture thickens slightly. Serve the cream and served with tea jelly.
